In preparation for my wedding this coming summer I have been commited to fitness so I can rock my dress and of course feel great in it. I have been doing booty camp with my SIL and let me tell you I have never felt better about myself. I suffer from asthma and was scared out of my mind to try boot camp for fear of having an attack. But I tried it out and loved it so much. Not only have I lost weight and inches but I have gained muscle, and have helped my lungs become much more healthier and stronger. I could not run a lap without stopping and now I am happy to say that I can.
Working out is just half of it though, its making sure that you change your eating habits as well. I started hearing all this hype about Quinoa and I couldn't believe that I had never tried it before much less heard of it. Its a grain that is rich in protein and iron and is a good source of fiber and is gluten free.
I tried some yummy quinoa that someone from the office prepared and I decided to create something along those lines and let me tell you that it came out finger-lickin' good!
You will need:
- Quinoa I used what I had at home with was Roland Roadted Garlic Quinoa
- Lime, I used about 10 key limes
- Yellow Onion
- Green Onions
- Bell Peppers(green, red, yellow and orange)
- avocado
- Cilantro
- Olive Oil I used about 2tbsp.
- One can of black beans
- Salt/Pepper to taste
- Optional chili flakes or I used some Chipotle Sauce
I cooked the Quinoa as directed
While that was cooking I combined my lime, chipotle sauce and olive oil
I chopped up all my veggies and added in the black beans
Once the quinoa was done cooking I added in the lime sauce stirred that in well and then added the veggies and the beans.
You can serve right away, I personally like refrigerating it for a bit to let it cool down and let the quinoa absorb all the yummy flavors. There are similar recipes that add in corn and I have made this with corn as well, I just left it out of this one today.
